One of my all time favorite recipes!!
I found it on Pinterest and My Life as a Mrs. blog. It's seriously good, folks. If your taste buds enjoy an occasional kick, then you must try this recipe. It is simple, fast, and deeelicious...We never have any leftovers when we have this for dinner. Try it out, and let me know what you think..
Ingredients
4 chicken breasts
1 bag jalapeno kettle chips, crushed
1 cup buttermilk
1 tablespoon salt
dash of cayenne
Directions
Preheat oven to 375. Lightly spray your cooking dish with olive oil. I lined the inside of my dish with foil...less mess.
In a bowl whisk together buttermilk, salt and cayenne.
Crush kettle chips and place in a shallow dish.
Using one piece of chicken at a time heavily coat with the buttermilk mixture and gently shake off excess.
Dip into chips and thoroughly coat on both sides.
Place on prepared baking dish. Repeat until all breasts are thoroughly coated.
Place into oven and bake for 25-35 minutes, or until cooked evenly through. Cooking times may vary depending on thickness of chicken, and actual oven temperatures.
Serve hot with ranch dressing..I put diced jalapenos in my ranch for this recipe.
*My homemade ranch*
1/2 cup sour cream
1/2 cup mayo
1 pack of dry ranch powder
splash of milk for creamy consistency
Enjoy,
Carrie
